Red, Hot & Blue Salsa

We love this twist on traditional salsa! Fresh blueberries provide more antioxidant power than cooked berries.  Be daring and try it, then let us know what you think!

You will need:

2 cups fresh blueberries, coarsely chopped
1 cup fresh blueberries – leave them whole
1/4 cup fresh lemon juice
3 tablespoons chopped fresh cilantro
2 jalapeño peppers, seeded and minced
1/3 cup diced red bell pepper
1/2 teaspoon salt
Lightly toss together coarsely chopped fresh blueberries, whole fresh blueberries, fresh lemon juice, chopped fresh cilantro, seeded & minced jalapeño peppers, diced red bell pepper, and  salt in a large bowl.   Be gentle to prevent smashing the whole berries.
You may serve immediately, or cover & chill.
Delicious with tortilla chips (scoop style), over cream cheese on crackers, or on
cinnamon pita chips!
