SWEET POTATO BISCUITS
You will need:
2 cups whole wheat flour
1 tablespoon baking powder
1 1/2 honey
1 1/2 teaspoon salt
3 tablespoons cold unsalted butter, cut into small pieces
1 1/2 cups mashed baked sweet potatoes
3 tablespoons lowfat milk, or a little more as needed
Nonstick baking sheet
Heat oven to 425 degrees.
Combine the flour, baking powder & salt in a large bowl. Stir to blend thoroughly. Add butter by cutting in until crumbled.
In a separate bowl, stir the mashed sweet potatoes, honey & milk together, blend well.
Add the sweet potatoes & milk mixture into the flour mixture, mix with a fork until dough begins to hold together.
Add additional milk, 1 tablespoon at a time, or as needed, until soft dough forms.
Turn dough out on a large piece of wax paper and pat to a thickness of 3/4 inch. Use a floured 2 1/2 inch biscuit cutter to cut out rounds of dough.
NOTE: If you don’t have a biscuit cutter, you can use a water glass. Simply turn upside, flour the rim, and use to cut out your dough rounds.
Transfer dough rounds onto a non-stick baking sheet.
Bake until golden brown, 13-15 minutes, depending on your oven.
I like them best served warm. Enjoy!
