Tofu Spinach Curry
You will need:
1 jar Mike’s Organic Curry Love – Spinach Curry (or your fav flavor)
14 oz firm or medium firm Tofu – sliced
1/2 cup frozen peas
1 cup frozen broccoli cauliflower combo
1 tbspn olive oil
Optional – brown rice
In a large pan, warm olive oil and add sliced tofu, stir fry gently.
Add broccoli, cauliflower and peas, toss gently with tofu to cook.
Add sauce and simmer, approximately 12 minutes.
If using frozen vegetables, cook until thawed before adding Mike’s Organic Curry Love sauce.
If using brown rice, prepare as directed and put cooked brown rice into bowl and top with curry mixture.
