NO BULL FRENCH ONION SOUP
You will need:
1/4 cup Olive Oil
32 oz Low Sodium Vegetable Broth (approx 4 1/2 cups)
1 1/4 cups Red Wine
1 Bay Leaf
1 tspn Balsamic Vinegar
1 tspn Ground Thyme
1/2 tspn Salt
Dash of Black Pepper
Bread for Croutons – toasted & cut into cubes
Cheese or Cheese Alternative to top each serving
In a large stock pot, heat olive oil on low heat. Add sliced onions and simmer on low heat for about an hour, or until onions are golden brown.
Add vegetable broth, red wine, balsamic vinegar, ground thyme, bay leaf,ground mustard, salt & pepper. Continue simmering on low heat for about 45 minutes.
Remove from heat, remove bay leaf from soup. Fill individual bowls with soup, top with croutons and cheese and place under broiler until cheese is melted and bubbly brown.
Enjoy with a Kale & Tomato Salad!
